Ingredients

The ingredients are:
  • Dressing
  • 1/2 cup lemon juice
  • 1/2 cup catsup
  • 1/2 cup chopped onion
  • 1 teaspoon salt
  • 3 tablespoons honey
  • 1 cup salad oil
  • Salad
  • 2 bunches romaine lettuce
  • 1 head iceberg lettuce
  • 1 large cucumber, peeled and coarsely chopped
  • 1 pint cherry tomatoes, stemmed and cut in half
  • 2 small avocados, peeled and diced
  • 3/4 cup coarsely chopped black olives
  • 2 cups croutons (use good quality store bought or make your own)

How to Make

  • Step 1: Make dressing by combining lemon juice, catsup, onion, slat, honey, and oil in food processor with metal blade or in blender. Dressing may be refrigerated for several weeks.

  • Step 2: Tear lettuce into bite-size pieces. Wash and dry (can store in plastic bags until ready to use).

  • Step 3: Before serving, place lettuce in a large salad bowl. Add remaining ingredients and toss with the dressing.
