The ingredients are:
  • 8 ounces boneless skinless chicken breast,diced
  • 1/2 teaspoons sugar
  • 1 teaspoon cornstarch
  • 3 tablespoons oil
  • Eggs:
  • 2 eggs, beaten
  • 1 tablespoon oil
  • Rice:
  • 3 tablespoons oil
  • 12 ounces cooked white rice,(3 cups)
  • 2 tablespoons soy sauce
  • 1 cup frozen peas and carrots
  • 2 tablespoons onion, minced
  • Garnish:
  • 2 green onions, minced

How to Make

  • Step 1: Put soy sauce on cooked rice

  • Step 2: Mix cornstarch and sugar with chicken

  • Step 3: Toss

  • Step 4: Heat 1 tablespoons oil in large wok get hot

  • Step 5: Pour in beaten eggs and fry quickly, stirring to break up, until eggs are in tiny pieces.

  • Step 6: Remove from pan

  • Step 7: Set aside.

  • Step 8: Heat 3 tablespoons oil get hot

  • Step 9: Stir fry chicken mixture about 2 minutes or until done.

  • Step 10: Remove from pan.

  • Step 11: Heat 3 tablespoons oil

  • Step 12: Stir-fry onions about 1 minute.

  • Step 13: Add rice, stir fry until rice is thoroughly heated.

  • Step 14: Add peas and carrots, stir fry about 1 minute.

  • Step 15: Add reserved egg and chicken mix well

  • Step 16: Add green onions

  • Step 17: Toss

  • Step 18: Season to taste
