Ingredients

The ingredients are:
  • 2 1/2 pounds zucchini
  • 4 ounces uncooked white rice,(1/2 cup)
  • 1 cup onions, minced
  • 3 tablespoons olive oil
  • 2 garlic cloves, minced
  • 2 tablespoons flour
  • 1/2 cup milk
  • 4 ounces parmesan cheese, grated
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • Topping:
  • 2 tablespoons olive oil
  • 1/4 ounce parmesan cheese, grated (2 tablespoons)

How to Make

  • Step 1: Preheat oven to 325°F

  • Step 2: Grease a 2-quart baking dish with oil.pam spray

  • Step 3: Wash zucchini and trim ends.

  • Step 4: Cut in half lengthwise

  • Step 5: Then grate and place in a large bowl.

  • Step 6: In a large skillet

  • Step 7: Over medium heat, heat 3 tablespoons oil.

  • Step 8: Cook onions until translucent, 8 minutes.

  • Step 9: Raise heat and continue cooking until lightly browned.

  • Step 10: Add garlic and cook 1 minute more.

  • Step 11: Add rice and sauté for 2 minutes.

  • Step 12: Season liberally with salt and pepper.

  • Step 13: Add rice mixture to zucchini (liquid as well from grated zucchini) along with 1/2 cup milk.

  • Step 14: Add cheese to zucchini mixture.

  • Step 15: Adjust seasoning as needed and stir to combine.

  • Step 16: Transfer to baking dish and cover tightly with foil. Bake until rice is cooked but not mushy, about 50 minutes.

  • Step 17: Remove foil, drizzle top with 2 tablespoons olive oil and sprinkle on remaining cheese.

  • Step 18: Bake, uncovered, until crispy and golden brown, 10 more minutes.
