  • 2 stalks celery, diced
  • 2 carrots, diced
  • 2 garlic cloves, minced
  • 14 ounces lentils, (2 cups)
  • 1 bay leaf
  • 1 tablespoon parsley, minced
  • 1 teaspoon salt
  • 1⁄4 teaspoon fresh ground black pepper
  • 8 cups beef broth
  • 1 pound hot dogs, sliced in half inch rounds
  • 1 tablespoon red wine vinegar

How to Make

  • Step 1: Saute onions, garlic, carrots, and celery in heated bacon grease

  • Step 2: For 5 minutes.

  • Step 3: Add beef stock, lentils, bay leaf, salt, and pepper.

  • Step 4: Bring to a boil.

  • Step 5: Lower heat and cook slowly, covered, about 30 minutes, until lentils are just tender.

  • Step 6: Add frankfurters and cook another 10 minutes.

  • Step 7: Remove from heat and stir in vinegar.

  • Step 8: Take out bay leaf.

  • Step 9: Stir in parsley simmer 5 minutes more
