  • 1 cup carrots, grated

  • 1/4 cup green bell pepper, minced
  • 3 eggs
  • 8 ounces sour cream
  • 1/4 teaspoon pepper
  • 8 ounces sharp cheddar cheese, shredded
  • 8 ounces herb stuffing bread crumbs

  • Step 2: Pam spray a 9x13 casserole

  • Step 3: Remove 1/4 of the bread crumbs for topping mix
