  • 2 pounds dry mostaccioli pasta
  • 3/4 pound ground beef, ground twice
  • 1/4 pound ground lean pork
  • 1/4 pound grated parmesan cheese
  • 1 clove garlic, minced
  • 2 tablespoons parsley,minced
  • 1/2 cup bread crumbs
  • 1 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • 1/8 teaspoon nutmeg
  • 3 eggs
  • 2 cups spaghetti sauce
  • 1/2 ounce parmesan cheese, grated
  • 1/2 ounces romano cheese, grated

How to Make

  • Step 1: Parboil the pasta to make it pliable

  • Step 2: Drain

  • Step 3: And cool.

  • Step 4: Mix the meat with cheese, garlic, parsley, and bread crumbs.

  • Step 5: (Run it through food processor) Season with salt, pepper, and nutmeg.

  • Step 6: Add the eggs, which have been slightly beaten.

  • Step 7: The mixture although similar to Italian meat balls must be softer so you can squeeze it through the large opening of a piping bag.

  • Step 8: If necessary, add a little of the spaghetti sauce or some broth.

  • Step 9: Fill the mostaccioli.

  • Step 10: Put a layer in a buttered baking dish

  • Step 11: Over with spaghetti sauce,

  • Step 12: And sprinkle with cheese.

  • Step 13: Repeat, ending with sauce and cheese.

  • Step 14: Bake for an hour in a 350˚F oven.
