Step 1: Whisk 3 cups flour and the ½ teaspoon sugar and 1/8 teaspoon salt.
Step 2: Add a mixture of milk ,egg and water to make a smooth thin dough.
Step 3: Roll out as thin as possible, using a little of the remaining flour.
Step 4: Cut into 2½-inch squares.
Step 5: Smooth the cottage cheese with sour cream.
Step 6: Add the egg yolk, remaining sugar and salt, and fold into triangles or into an envelope shape.
Step 7: Pinch the edges together.
Step 8: Drop into boiling salted water for 5 minutes.
Step 9: Serve with melted butter and raisins.
Step 10: You may sauté these in the butter if you wish, turning once.
Step 11: Cook 2 minutes on each side.
