  • 1 1/2 pounds cooked,boneless,skinless,chicken breast, diced (4 cups)
  • 1 cup celery, sliced
  • 1/2 cup green bell pepper, diced
  • 1/2 cup onions, diced
  • 4 eggs, hard boiled, chopped
  • 1 jar (4 ounces) pimentos, chopped
  • 3/4 cup mayonnaise
  • 1/2 teaspoon accent, optional
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons lemon juice
  • Topping:
  • 1 1/2 cups plain potato chips, crushed
  • 8 ounces cheddar cheese, shredded,(1 cup)
  • 2/3 cup peanuts , chopped

How to Make

  • Step 1: Preheat oven to 400 degrees F

  • Step 2: Spray 9x13 baking dish with Pam

  • Step 3: Mix salad ingredients together until combined

  • Step 4: Pour into pan

  • Step 5: Mix topping ingredients together and pour on top bake covered 30 minutes until hot and bubbly

  • Step 6: Take foil off and bake 10 more minutes so topping crisps up
