Ingredients

The ingredients are:
  • 1 pound dry red beans
  • 8 cups water
  • 1/2 pound ham, chopped
  • 1 teaspoon salt
  • 1/4 cup tomatoes,canned
  • 1/2 teaspoon dried thyme
  • 1 tablespoon fresh parsley , minced
  • 1 stalk celery, sliced
  • 1 plantain,firm, ripe ,sliced
  • 1 tablespoon sugar ,to taste

How to Make

  • Step 1: Wash beans and soak overnight.

  • Step 2: Boil just beans for two hours in water in which beans are soaked

  • Step 3: Add all ingredients except plantain,

  • Step 4: Simmer 1 hour more

  • Step 5: Which is added only after beans are soft

  • Step 6: Cook 30 minutes more

  • Step 7: Add sugar to taste
