Ingredients

The ingredients are:
  • 1 package (18 ounce) white cake mix ( Betty Crocker)
  • 1 package (3 ounce) strawberry gelatin (4-serving size)
  • 1 cup strawberries, mashed (with the juice)
  • 1 cup oil (vegetable oil or can use 1/2 cup applesauce and oil)
  • 1/2 cup whole milk (or half and half)
  • 4 large eggs
  • FOR FROSTING
  • 1 package (8 ounce) cream cheese (softened)
  • 1/3 cup butter, softened
  • 3 1/2 cups confectioner's sugar
  • 3/4 cup strawberries, mashed (drained well, NO MORE than 3/4 cup or the frosting will be too runny)

How to Make

  • Step 1: Preheat oven to 350 degrees. Lightly grease three 9 inch round pans. Set pans aside.

  • Step 2: Place cake mix, strawberry gelatin, mashed strawberries, oil, milk, and eggs in large mixing bowl and beat on low speed for 1 minute (strawberries should be well-blended in with the batter). Divide batter among pans. Bake cakes until lightly brown (about 28-30 minutes). Remove from oven and allow to cool completely.

  • Step 3: For the frosting; Combine cream cheese, and butter and mix on low speed for a minute. Add sugar and strawberries. Blend frosting on low speed until well blended.

  • Step 4: To assemble: place one cake layer on plate and spread top with frosting, add another cake layer and frost the top, add last cake layer and frost the top. Use remaining frosting for the sides of the cake.
