Ingredients

The ingredients are:
  • 2 pounds ground beef
  • 1/2 cup onion, chopped
  • 1 teaspoons garlic, smashed
  • 1 package (1 ounce )taco seasoning
  • 8 cups beef stock
  • 2 cups frozen corn
  • 1 can(15 ounces) black beans ,drained
  • 1 can(14 ounces )petite diced tomatoes
  • 1 can (15 ounces) tomato puree
  • 1 can (15 ounces) refried beans
  • 2 teaspoons lime juice
  • 2 teaspoons salt
  • 1 tablespoon fresh cilantro, minced
  • 7 ounces dry white rice ,(1 cup)
  • Garnish:
  • 8 ounces cheddar cheese, shredded
  • 4 ounces sour cream
  • 2 green onions, minced

How to Make

  • Step 1: In large dutch oven

  • Step 2: Brown the ground beef, onion and garlic.

  • Step 3: Drain.

  • Step 4: Add in the taco seasoning and mix together.

  • Step 5: Add the beef stock, corn, refried beans, black beans, diced tomatoes, tomato puree, lime juice, salt, cilantro and rice.

  • Step 6: Breaking up the refried beans to smoothness

  • Step 7: Bring this to a boil, then cover and simmer for about 25-30 minutes until the rice is done

  • Step 8: Garnish how you like
