Ingredients

The ingredients are:
  • Mustard Dressing
  • 1 egg yolk
  • 4 teaspoons Dijon mustard
  • 2 teaspoons wasabi paste
  • 1/2 cup grapeseed oil
  • 1/4 teaspoon light soy sauce (if you can find it, use white soy sauce)
  • 1 tablespoon freshly squeezed lime juice, or more to taste
  • Sea salt and freshly ground black pepper, to taste
  • 1 pound thin green beans
  • 1 shallot, sliced into rings, to garnish
  • 1 tablespoon furikake seasoning, to garnish

How to Make

  • Step 1: Blanch the beans in boiling salted water for about 4 minutes, then drain.

  • Step 2: To make the dressing, mix the egg yolk, mustard, and wasabi together in a bowl. Gradually add the oil in a thin stream, whisking constantly (you can make the dressing in a food processor or by hand). Add the soy sauce and lime juice to taste, then season to taste.

  • Step 3: Toss the cooled, blanched beans in the dressing. Garnish with the shallot rings and the furikake seasoning.
