  • 1 stick butter, melted
  • 3 cup frozen corn kernels, divided
  • 2 eggs
  • 8 ounces sour cream,(1 cup)
  • 8 ounces pepper jack cheese, cut into ½-inch cubes
  • ½ cup cornmeal
  • 1 can(4 ounces)green chiles, drained, chopped
  • ½ teaspoon salt
  • 1/8 teaspoon white pepper
  • 4 ounces parmesan cheese,(½ cup) ,grated
  • 2 tablespoons butter,for greasing pan

How to Make

  • Step 1: Preheat oven to 350°F.

  • Step 2: Generously butter and Pam sprayed a 2-quart rectangular casserole dish.

  • Step 3: In a blender,

  • Step 4: Puree 1 cup corn kernels with melted butter and eggs.

  • Step 5: In a large bowl

  • Step 6: Combine all remaining ingredients except Parmesan.

  • Step 7: Add pureed corn and mix well.

  • Step 8: Pour into casserole dish, sprinkle with Parmesan, and bake for 30 minutes, or until puffed and golden
