  • ⅓ cup vegetable oil
  • 1 cup water
  • Frosting:
  • ▢1 cup (2 sticks / 227 g) unsalted butter, room temperature
  • 3½ cups confectioners sugar,sifted
  • ⅛ teaspoon salt
  • ¼ cup lemon juice
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon lemon extract
  • 1½ teaspoons lemon zest

How to Make

  • Step 1: Preheat the oven to 350°F

  • Step 2: Spray an 8x8-inch baking dish with nonstick cooking spray.

  • Step 3: Cake:

  • Step 4: In a large bowl

  • Step 5: Combine flour, sugar, salt, baking soda, and lemon zest.

  • Step 6: Whisk to combine.

  • Step 7: To the flour mixture

  • Step 8: Add lemon juice, lemon extract,vinegar, oil, and water that you have combined

  • Step 9: Whisk until ingredients are fully combined.

  • Step 10: Pour the cake batter into the prepared pan.

  • Step 11: Bake for 25-30 minutes.

  • Step 12: The cake is done when an inserted toothpick is inserted and comes out clean with a few crumbs, but no wet batter.

  • Step 13: Let the cake cool while you prepare the frosting.

  • Step 14: Lemon Buttercream:

  • Step 15: Using a handheld mixer, beat the butter, sugar, and salt on medium speed until well combined.

  • Step 16: Add lemon juice, lemon extract and vanilla. Continue to beat for another 3 to 5 minutes, or until creamy.

  • Step 17: Fold in the lemon zest.

  • Step 18: Spread the buttercream over the cooled cake.
