Step 1: Using 1 tablespoon of the bacon grease in a cast iron skillet
Step 2: Sauté green onion till tender but not brown.
Step 3: Put potatoes in a large bowl
Step 4: Add flour, salt and pepper.
Step 5: Season To taste
Step 6: Stir until mixed well.
Step 7: Add onions and milk and mix .
Step 8: Heat remaining bacon grease in the skillet cooked the onions in.
Step 9: Pour potato mixture into skillet and using a pancake turner, press the potatoes down firmly all around the pan until all potatoes are even and firmly pressed down.
Step 10: Cooking on low heat, cook till browned lightly(about 20 minutes)
Step 11: Add more bacon grease if needed
Step 12: Turn and cook till browned on other side.
Step 13: This is going to be tricky don't burn yourself
Step 14: When crispy and brown, remove to platter
