Ingredients

The ingredients are:
  • 6 ounces genoa salami, chopped
  • ½ cup onion, chopped
  • ⅓ cup sofrito
  • ¼ cup cilantro, minced
  • 3 garlic cloves, smashed
  • 4 ounces tomato sauce
  • 1 teaspoon ham bouillon
  • ½ cup stuffed green olives
  • 1 jar (4 ounces) pimentos
  • 1 pound potatoes, peeled, diced
  • 8 ounces dry spaghetti
  • 1 bay leaf
  • 1/2 teaspoon paprika
  • 1/8 teaspoon nutmeg
  • 1 teaspoon sazon seasoning
  • ¼ teaspoon ground oregano
  • ½ teaspoon ground black pepper
  • 1/2 teaspoon salt, to taste
  • 8 cups water
  • 2 avocado, chopped

How to Make

  • Step 1: In large pot over medium high heat

  • Step 2: Cook salami for 5 minutes, stirring often.

  • Step 3: Get spices together in bowl

  • Step 4: Add in onions and sofrito, cook an additional minute or two.

  • Step 5: Stir in garlic, olives, and herbs and seasonings.

  • Step 6: Add tomato sauce

  • Step 7: Stir and allow to cook an additional minute before adding in water, pimientos and potatoes.

  • Step 8: Bring to a boil

  • Step 9: Reduce heat to a simmer and allow to cook for 30 minutes before adding in the pasta (break into soup or leave whole).

  • Step 10: If you see that you need more water for the noodles, go ahead and add another cup or two. Cook until pasta is tender

  • Step 11: Take out bay leaf

  • Step 12: Add avocado
