Step 1: In large pot over medium high heat
Step 2: Cook salami for 5 minutes, stirring often.
Step 3: Get spices together in bowl
Step 4: Add in onions and sofrito, cook an additional minute or two.
Step 5: Stir in garlic, olives, and herbs and seasonings.
Step 6: Add tomato sauce
Step 7: Stir and allow to cook an additional minute before adding in water, pimientos and potatoes.
Step 8: Bring to a boil
Step 9: Reduce heat to a simmer and allow to cook for 30 minutes before adding in the pasta (break into soup or leave whole).
Step 10: If you see that you need more water for the noodles, go ahead and add another cup or two. Cook until pasta is tender
Step 11: Take out bay leaf
Step 12: Add avocado
