  • 20 ounces cooked white rice,(3 cups)
  • 1 pound ground beef
  • 1 packet (1 ounce)taco seasoning
  • 1 can(15 ounces) tomato sauce
  • 8 ounces cottage cheese,(1 cup)
  • 8 ounces sour cream,(1 cup)
  • 12 ounces cheddar cheese, grated,(1 1/2 cups)
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground pepper

How to Make

  • Step 1: Preheat oven to 350°F

  • Step 2: And grease a 9x9-inch baking dish with nonstick spray.

  • Step 3: Set aside.

  • Step 4: In a large skillet

  • Step 5: Season the ground beef with taco seasoning and brown until cooked through.

  • Step 6: Add tomato sauce and simmer for 5 minutes.

  • Step 7: In a medium bowl

  • Step 8: Stir together rice, cottage cheese, and sour cream.

  • Step 9: Season to taste with salt and pepper

  • Step 10: And spread mixture in bottom of Pam sprayed baking dish.

  • Step 11: Top with meat sauce and sprinkle with cheddar cheese.

  • Step 12: Bake until cheese has melted and sauce is bubbly, 25 minutes.
