Ingredients

The ingredients are:
  • 2 tablespoons olive oil
  • 1 cup onion, chopped
  • 1 clove garlic,crushed
  • 1 tablespoon fresh ginger, finely grated
  • 1 teaspoon chili powder
  • 1/4 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 2 carrots, peeled, grated
  • 3 celery stalks, chopped
  • 1 can (15 ounces) mexican style tomatoes
  • 2 pound potatoes, peeled, finely diced
  • 3 cups vegetable stock
  • 1 can (15 ounces) butter beans, drained
  • 1 can (15 ounces) red kidney beans, drained
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon oregano
  • 2 tablespoons cilantro, minced

How to Make

  • Step 1: Heat the Oil in a large pot

  • Step 2: Saute the Onion 3 minutes

  • Step 3: Stir in the Garlic, Ginger, Chili Paste, Cumin, Coriander, oregano, Carrots and Celery

  • Step 4: Fry 3 minutes

  • Step 5: Add the Tomatoes, Potatoes and Stock

  • Step 6: Reduce heat and simmer, covered, until the vegetables are halfway cooked

  • Step 7: Once halfway cooked,

  • Step 8: Add the Butter Beans, Kidney Beans and the Seasoning to taste

  • Step 9: Continue to cook until all the vegetables are soft and cooked through
