Step 1: Heat the Oil in a large pot
Step 2: Saute the Onion 3 minutes
Step 3: Stir in the Garlic, Ginger, Chili Paste, Cumin, Coriander, oregano, Carrots and Celery
Step 4: Fry 3 minutes
Step 5: Add the Tomatoes, Potatoes and Stock
Step 6: Reduce heat and simmer, covered, until the vegetables are halfway cooked
Step 7: Once halfway cooked,
Step 8: Add the Butter Beans, Kidney Beans and the Seasoning to taste
Step 9: Continue to cook until all the vegetables are soft and cooked through
