  • 1 cup mayonnaise
  • 1/4 cup minced cornichons, dill pickles or sweet pickles
  • 2-3 tablespoons minced shallots (about 1 medium)
  • 3 tablespoons drained capers, minced
  • 2 tablespoons finely chopped Italian parsley
  • 1 tablespoon freshly squeezed juice from 1 lemon
  • 3/4 teaspoon freshly ground black pepper
  • 1/4 - 1/2 teaspoon kosher salt (use less if not using kosher salt) or to taste
  • 1/2 - 1 teaspoon sugar, to taste (optional)
  • 1/4 teaspoon hot sauce (optional)
