Ingredients

The ingredients are:
  • 2 tablespoons oil
  • 1 cup onion, chopped
  • 2 carrots, peeled , sliced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 teaspoon coriander
  • 1/2 teaspoon cumin
  • 1 teaspoon turmeric
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon chili powder
  • 1 pound red potatoes, quartered
  • 4 ounces black lentils,(1/2 cup)
  • 1 can(15 ounce)diced tomatoes
  • 1 can(14 ounces) coconut milk
  • 1 cup vegetable broth
  • 1 teaspoon garam masala
  • 1 teaspoon salt
  • 2 teaspoon brown sugar
  • 1 cup frozen peas
  • 4 cups fresh baby spinach
  • 1/4 cup cilantro, chopped
  • 1 lime

How to Make

  • Step 1: Get spices together in a bowl

  • Step 2: In a Dutch oven

  • Step 3: Over a medium heat with oil, sauté onions and carrots for 7 minutes, stirring occasionally.

  • Step 4: Stir in garlic, ginger, coriander, cumin, turmeric,

  • Step 5: Garam masala,cinnamon and chili powder then cook 1 minute to release aromatics.

  • Step 6: Stir in the potato and lentils to coat with the spice mixture then add the canned tomatoes, coconut milk, broth, salt and sugar.

  • Step 7: Bring to the boil, cover then reduce heat to medium-low.

  • Step 8: Simmer for 40 minutes.

  • Step 9: Stir in peas and spinach and continue to simmer another 5 minutes.

  • Step 10: Remove from the heat and stir in the cilantro and juice from half the lime.
