Ingredients

The ingredients are:
  • 3 tablespoons olive oil
  • 1 ½ cups yellow onion, minced
  • 1 clove garlic, smashed
  • 1/4 cup yellow bell pepper, minced
  • 1 teaspoon curry powder
  • ½ teaspoon ground turmeric
  • 1 carton( 32 ounce ) chicken broth
  • 2 cups water
  • 1 teaspoon fresh ginger,peeled,grated
  • 3 cups frozen corn
  • 12 ounces dry yellow lentils, rinsed,(1 ½ cups)
  • 1 ½ teaspoons salt
  • ¼ teaspoon black pepper

How to Make

  • Step 1: Heat oil saute onions and peppers

  • Step 2: Add garlic and ginger

  • Step 3: Add spices

  • Step 4: Add broth & water

  • Step 5: Add lentil

  • Step 6: Simmer 20 minutes

  • Step 7: Add corn

  • Step 8: Simmer 10 minutes

  • Step 9: Can use immersion blender or leave chunky

  • Step 10: Season to taste
