Ingredients

The ingredients are:
  • 3/4 cup greek yogurt
  • 1/2 teaspoon lemon zest, grated
  • 1 teaspoon lemon juice
  • 1/4 teaspoon kosher salt
  • 2 tablespoons olive oil, divided
  • 2 (1 inch thick) slices sourdough bread
  • 4 garlic cloves, chopped
  • 1 pound cherry tomatoes
  • Oil-packed anchovy fillets, for serving (optional)
  • Chives, chopped, for serving
  • Balsamic glaze, for serving
  • Sea salt

How to Make

  • Step 1: In a bowl or cup combine the first 4 ingredients (-salt).

  • Step 2: In a skillet over medium high heat heat 1 tablespoon oil; toast bread turning halfway through, adding more oil if needed for about 2 minutes per side. Transfer to plates.

  • Step 3: In the same skillet over medium high heat add 1 tablespoon oil and then add the garlic, cooking for about 30 seconds and then add the tomatoes, stirring occasionally until tomatoes start to blister and soften (3-5 minutes). Smash some of the tomatoes with a spoon and continue to cook for another 2 minutes or until they begin to collapse. Season with salt.

  • Step 4: Spread yogurt mixture on the toasts; spoon tomatoes over and then top with anchovies and chives; drizzle balsamic glaze over and season with sea salt.
