Ingredients

The ingredients are:
  • 2 cups graham cracker crumbs, sifted
  • 1 cup powdered sugar, sifted
  • 2 tablespoons cocoa, sifted
  • 1 cup macadamia nuts, finely chopped
  • 1/8 teaspoon salt
  • 3 tablespoons honey
  • 2 teaspoons rum extract
  • 4-5 tablespoons cold water
  • 1 cup sweetened, flaked coconut

How to Make

  • Step 1: Mix crumbs, sugar, cocoa, macadamia nuts, and salt in a bowl.

  • Step 2: In a small bowl whisk the honey, rum extract, and 4 tablespoons of the water until mixed well.

  • Step 3: Add this to the dry ingredients and stir until it clumps together easily. Add up to 1 tablespoon of water if you need to make it moist enough to stick together. Don't make it so moist that it falls apart.

  • Step 4: Roll the mixture into one-inch balls with your hands. Then roll the balls in coconut to coat them.

  • Step 5: Place in an airtight container in the refrigerator for at least 12 hours to firm them up.
