Ingredients

The ingredients are:
  • 2 tablespoons olive oil
  • 1 cup yellow onion, finely chopped
  • 3 carrots, peeled ,finely chopped
  • 2 garlic cloves, minced
  • 1 can (15 ounces) spinach
  • 7 ounces dried lentils,(1 cup)
  • 2 teaspoons dried oregano
  • 1 teaspoon dried parsley
  • 2 cans (30 ounces)diced tomatoes,(15 ounces each)
  • 5 cups vegetable broth
  • 3 tablespoons lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

How to Make

  • Step 1: In a large pot

  • Step 2: Heat the olive oil over medium heat.

  • Step 3: Add the onion and carrot then cook for about 3 minutes, until onion is translucent.

  • Step 4: Add the garlic and cook for an additional 2 minutes.

  • Step 5: To the pot,

  • Step 6: Add the lentils, oregano, parsley, spinach,diced tomatoes and vegetable broth.

  • Step 7: Bring to a low boil then reduce to a simmer.

  • Step 8: Cover the pot partially with the lid and cook for 30 minutes, or until lentils are tender.

  • Step 9: Remove from heat then add lemon juice

  • Step 10: Stir

  • Step 11: Season to taste
