Step 1: Combine flour, baking powder, and 1/4 tsp salt,
Step 2: Whisk
Step 3: Set aside.
Step 4: In a saucepan
Step 5: Heat 1 cup of chocolate chips over low heat until melted, stirring constantly.(I think you could microwave it)
Step 6: Beat butter with a mixer on medium speed for 30 seconds.
Step 7: Beat in granulated sugar until combined.
Step 8: Add in melted chocolate, eggs, vanilla, and mint flavoring.
Step 9: Mix until combined.
Step 10: Stir in flour mixture and remaining chocolate pieces.
Step 11: Wrap dough in plastic wrap.
Step 12: Freeze 30 minutes or until firm enough to shape.
Step 13: Preheat oven to 350°F
Step 14: Shape dough into 1" balls
Step 15: Roll balls in powdered sugar.
Step 16: Place balls about 2" apart on ungreased cookie sheet.
Step 17: Bake in preheated oven for 10 to 12 minutes or until tops are crackled.
Step 18: Cool 2 minutes on cookie sheet.
Step 19: Roll in powdered sugar again
Step 20: Transfer to wire racks
Step 21: Cool.
