  • 2 pounds green beans, trimmed

  • 1 tablespoon fresh lemon juice, to taste
  • 1 tablespoon dijon style mustard, to taste
  • 2 tablespoons dry white wine vinegar
  • 1⁄2 cup olive oil
  • 2 eggs,hard boiled
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper, to taste

How to Make

  • Step 1: Boil whole beans in salted water for 5 minutes,

  • Step 2: Drain

  • Step 3: Cool

  • Step 4: In a blender

  • Step 5: Puree capers with lemon juice, mustard and 2 tablespoons white wine vinegar.

  • Step 6: With motor running, add oil in a thin, steady stream and blend until emulsified.

  • Step 7: Taste and adjust seasoning by adding salt and pepper.
