Ingredients

The ingredients are:
  • 8 ounces macaroni, dry
  • 14 1/2 ounces pink salmon (1 can)
  • 8 ounces Monterey jack cheese, shredded (2 cups)
  • 2 mushrooms, sliced
  • Sauce
  • 4 tablespoons butter
  • 1/2 cup onion, minced
  • 2 tablespoons flour
  • 2 cups milk
  • 2 tablespoons lemon juice
  • 1 tablespoon parsley, fresh, minced
  • 1 teaspoon dill, dried
  • 1 teaspoon capers

How to Make

  • Step 1: Cook macaroni in boiling water until al dente.

  • Step 2: Drain salmon.

  • Step 3: Break it into bite-size pieces.

  • Step 4: Make Sauce: Melt butter.

  • Step 5: Saute mushrooms and onion until transparent. Blend in flour, stirring constantly.

  • Step 6: Slowly stir milk into saucepan mixture.

  • Step 7: Cook until smooth and thick, stirring constantly. Add lemon juice, dill, capers, and parsley.

  • Step 8: Mix well.

  • Step 9: Spoon pasta into sprayed casserole dish.

  • Step 10: Put salmon on top.

  • Step 11: Sprinkle with 3/4 cup cheese.

  • Step 12: Pour sauce over it, and sprinkle with the rest of the cheese.

  • Step 13: Bake at 375 for 25 min or until hot and lightly browned.
