Step 1: Preheat oven to 350 degrees F
Step 2: If dates are hard steam for for a few minutes over simmering water to soften them and then let them cool and pit them and then chop each date into 6 pieces -- you have 1 cup dates (packed).
Step 3: In a bowl combine the dry ingredients (light brown sugar or muscovado - salt). Stir in the dates and the next 3 ingredients (-butter) and mix to make a thick batter. Place batter into a 2 quart baking dish.
Step 4: Over medium heat bring the coffee, 1 cup water and the dark brown sugar to a boil, stirring to dissolve sugar and melt butter. Pour liquid over the batter and then bake for 30 minutes. Pour brandy over the hot cake. Serve warm w with cold heavy cream or ice cream.
