Ingredients

The ingredients are:
  • 8 ounces date, whole (you need 1 1/2 cups)
  • 1 cup flour
  • 1/2 cup plus 2 tablespoons brown sugar
  • 1/2 teaspoon salt
  • 1 cup walnuts, chopped
  • 1/2 cup buttermilk (or plain milk)
  • 2 tablespoons butter, unsalted, melted
  • 2/3 cup dark brown sugar or muscovado
  • 2 tablespoons brandy (or kahlua)

How to Make

  • Step 1: Preheat oven to 350 degrees F

  • Step 2: If dates are hard steam for for a few minutes over simmering water to soften them and then let them cool and pit them and then chop each date into 6 pieces -- you have 1 cup dates (packed).

  • Step 3: In a bowl combine the dry ingredients (light brown sugar or muscovado - salt). Stir in the dates and the next 3 ingredients (-butter) and mix to make a thick batter. Place batter into a 2 quart baking dish.

  • Step 4: Over medium heat bring the coffee, 1 cup water and the dark brown sugar to a boil, stirring to dissolve sugar and melt butter. Pour liquid over the batter and then bake for 30 minutes. Pour brandy over the hot cake. Serve warm w with cold heavy cream or ice cream.
