Ingredients

The ingredients are:
  • 2 tablespoon olive oil
  • 1 small onion, finely chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 large cloves garlic, finely chopped
  • 1 tablespoon tomato paste
  • 1 cup ketchup
  • 1/4 cup molasses
  • 1/4 cup apple cider vinegar
  • 2 tablespoons dark brown sugar, packed
  • 1 tablespoon chili powder
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon dry mustard
  • 1/4 teaspoon cayenne (heaping spoonful)
  • 1/8 teaspoon allspice
  • 64 ounces (8) pork chops (about 8 ounces each, 1 inch thick)

How to Make

  • Step 1: Heat grill to medium-high. Heat oil in medium saucepan on medium. Add onion, salt and pepper and cook, covered, stirring occasionally, until tender, 5 to 6 minutes. Stir in garlic, and cook 1 minute. Add tomato paste and cook, stirring, 2 minutes.

  • Step 2: Add ketchup, molasses, vinegar, brown sugar, chili powder, Worcestershire sauce, dry mustard, cayenne, allspice and 1/4 cup water and mix to combine. Simmer, stirring occasionally, until thickened, 3 to 5 minutes; remove from heat.

  • Step 3: Grill pork chops just until cooked through, 5 to 7 minutes per side, basting with some sauce (about 1/3 cup) during last 2 minutes of cooking. Transfer to platter and baste again, then serve with remaining sauce
