  • 1/4 cup leek,sliced
  • 1 shallot, minced,small
  • 2 stalks asparagus, chopped
  • 1/8 cup tomatoes, diced
  • 1 tablespoon fresh parsley, minced
  • 2 ounces swiss cheese, shredded

How to Make

  • Step 1: Cook bacon until crisp

  • Step 2: In same pan

  • Step 3: Heat oil and butter

  • Step 4: Add shallot,leek and asparagus

  • Step 5: Cook until tender

  • Step 6: Remove

  • Step 7: Add eggs beaten seasoned to taste

  • Step 8: Add parsley

  • Step 9: Add to pan

  • Step 10: Put cooked veggies and crumbled bacon on one side

  • Step 11: Add tomato and cheese

  • Step 12: Cover

  • Step 13: Fold over plate
