Step 1: In a heavy skillet on medium heat
Step 2: Fry the bacon until almost crisp.
Step 3: Pour off all but 1 Tablespoon of the bacon fat from the skillet.
Step 4: In a large mixing bowl
Step 5: Whisk together the eggs, flour, salt and pepper to taste until just blended.
Step 6: Slowly add the half-and-half until ingredients are well blended and frothy.
Step 7: Fold in herbs
Step 8: Add the egg mixture to the skillet.
Step 9: Reduce the heat to very low and slowly cook covered until the egg mixture has set to a firm custard consistency.
Step 10: (check the bottom often to make sure it is not burning, but don't stir the mixture)
Step 11: It should take about 20 mins to set.
Step 12: The last 5 minutes
Step 13: Chop the bacon and add to the top
Step 14: Top with green onions.
Step 15: Slice into wedges and serve
