  • 1 tablespoon butter
  • 1 roma tomato, chopped
  • 2 ounces fresh mozzarella cheese, shredded
  • 2 leaves basil, minced
  • 1/4 teaspoon garlic, minced
  • 1 teaspoon parsley, minced
  • 1 shallot, minced
  • 1 ounce pancetta,fried, minced

How to Make

  • Step 1: In skillet heat butter

  • Step 2: Add garlic shallot and pancetta cook until translucent

  • Step 3: Remove

  • Step 4: Add egg beaten seasoned to taste add parsley

  • Step 5: Pour in pan

  • Step 6: Add pancetta mixture back in on one side

  • Step 7: Add mozzarella and tomato

  • Step 8: And basil

  • Step 9: Cover

  • Step 10: Fold

  • Step 11: Plate
