Ingredients

The ingredients are:
  • Filling and Cream Cheese Topping:
  • 1/2 pound bacon to equal 8 slices, chopped (weight is a guestimate)
  • 2 jalapenos, sliced into rounds (seeded if preferred)
  • 1 onion, chopped
  • 1 1/2 pounds chicken breast, thinly sliced
  • 1.25 ounce packet of taco seasoning (use more or less depending on your taste)
  • Pinch kosher salt
  • Zest and juice of 2 limes
  • 2-3 ounces cream cheese, at room temperature
  • 1/2 cup sour cream
  • Jalapeno hot sauce, to taste
  • Tacos:
  • 12 crispy taco shells, warmed
  • 1 cup shredded Cheddar
  • 2 large jalapenos, minced

How to Make

  • Step 1: For the filling and cream cheese topping: In a large skillet over medium heat, add the bacon and cook until crisp, about 10 minutes. Remove with a slotted spoon to a paper towel-lined plate.

  • Step 2: Raise the heat to medium high and add the jalapenos and onions. Cook, stirring for a minute or two, then add the chicken in an even layer. Sprinkle over the taco seasoning, add a pinch of salt and cook, without stirring, for 2 minutes. Stir, then continue to cook until the chicken is cooked through, an additional 2 to 3 minutes. Squeeze over the lime juice and remove from the heat.

  • Step 3: Add the cream cheese and sour cream to a bowl and mix until well combined. Stir in the lime zest and season with the hot sauce.

  • Step 4: For the tacos: Serve the chicken mixture, bacon and cream cheese topping alongside each other with the crispy taco shells, shredded Cheddar and minced jalapenos, then have everyone make their own tacos.
