  • 4 tablespoons butter, unsalted
  • 6 garlic cloves, sliced
  • 1 pound sea scallops
  • Kosher salt
  • 1 tablespoon olive oil
  • 2 teaspoons sherry vinegar or red wine vinegar
  • Pepper

How to Make

  • Step 1: In skillet on medium heat melt the butter and then add the garlic and cook for about 5 minutes, swirling the pan so the garlic doesn't burn. Transfer the garlic butter to a bowl. Wipe out skillet.

  • Step 2: Pat the scallops dry; season with salt. Heat oil in the same skillet on medium high heat and place scallops in pan, spacing them apart and cook, swirling the pan occasionally until browned (5 minutes). Turn scallops over and cook until golden and opaque in center (2 -5 minutes). Transfer to a platter.

  • Step 3: Stir vinegar into garlic butter; season with salt and pepper. Spoon over scallops and top with basil, if desired.
