Ingredients

The ingredients are:
  • 1 1/4 cups dates, chopped
  • 1 1/4 cup water
  • 1 1/2 teaspoons baking soda
  • 4 ounces butter, room temperature
  • 1 1/4 cups sugar
  • 3 eggs
  • 2 1/2 cups flour
  • 2 apples, peeled, cored and grated
  • For the toffee sauce:
  • 1/4 cup water
  • 3/4 cups sugar
  • 4 ounces butter, cut into pieces
  • 2/3 cups heavy (whipping) cream

How to Make

  • Step 1: To make the puddings: in a saucepan over medium high heat combine the water, dates and baking soda and bring to a boil, stirring occasionally. Remove from heat and let cool.

  • Step 2: Preheat oven to 325 degrees F. Spray the cups of cupcake tins with nonstick cooking spray -- you need 24 cups in all.

  • Step 3: In the bowl of an electric mixer beat the butter and sugar on medium speed until light and fluffy. Beat in eggs one at a time and then fold in flour, date mixture and apples. Spoon into the prepared cupcake tins and bake for 25 minutes or until a skewer inserted into center comes out clean. Remove from oven and let cool on a wire rack for 10 minutes.

  • Step 4: To make the sauce: in a saucepan over medium heat add the water and sugar and bring to a boil. Cook for 3-5 minutes or until mixture begins to caramelize. Whisk in butter and then whisk in cream until sauce is smooth.

  • Step 5: To serve: spoon toffee sauce over warm puddings.
