Ingredients

The ingredients are:
  • 2 tablespoons oil
  • 1 cup yellow onion,diced
  • 1/3 cup red bell pepper, diced
  • 2 garlic cloves, minced
  • 8 ounces uncooked long grain rice,(1 1/4 cups)
  • 1 can (10 ounces) diced tomatoes with green chilies,(rotel)
  • 1 can (15 ounces) black beans, drained
  • 1 can (15 ounces) sweet corn kernels, drained
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/8 teaspoon fresh ground pepper
  • 2 cups vegetable broth
  • 1 tablespoon cilantro, minced
  • 1 tablespoon fresh lime juice

How to Make

  • Step 1: Heat oil in a large nonstick skillet over medium-high heat.

  • Step 2: Add onions and red peppers

  • Step 3: Cook for 3 minutes.

  • Step 4: Stir in garlic and continue to cook for 30 seconds.

  • Step 5: Add rice and cook, stirring often, for 2 minutes.

  • Step 6: Stir in diced tomatoes with green chilies, black beans, and corn.

  • Step 7: Season with cumin, salt and fresh ground pepper.

  • Step 8: Stir in vegetable broth and bring to a boil.

  • Step 9: Cover

  • Step 10: Reduce heat to low, and cook for 20 minutes

  • Step 11: Let stand covered 5 minutes

  • Step 12: Remove cover, fluff with fork and stir in cilantro and lime juice.
