Step 1: Heat oil in a large nonstick skillet over medium-high heat.
Step 2: Add onions and red peppers
Step 3: Cook for 3 minutes.
Step 4: Stir in garlic and continue to cook for 30 seconds.
Step 5: Add rice and cook, stirring often, for 2 minutes.
Step 6: Stir in diced tomatoes with green chilies, black beans, and corn.
Step 7: Season with cumin, salt and fresh ground pepper.
Step 8: Stir in vegetable broth and bring to a boil.
Step 9: Cover
Step 10: Reduce heat to low, and cook for 20 minutes
Step 11: Let stand covered 5 minutes
Step 12: Remove cover, fluff with fork and stir in cilantro and lime juice.
