Step 1: Pit apricots or plums; cut into quarters (if using peaches, peel and pit). In blender or food processor, purée fruit in batches. Transfer purée to stainless steel or enamelled saucepan; blend in water and lemon juice.
Step 2: Bring to boil; reduce heat and simmer, uncovered, for 10 minutes. Skim off foam; stir in sugar. Let cool. Taste and adjust sweetness, if necessary.
Step 3: Transfer to storage container, cover and refrigerate for up to 8 weeks or freeze in ice cube trays. Makes about 3 cups (750 mL).
Step 4: To Make Fruit Nectar Drink: In glass, combine about 2 tbsp (25 mL)
Step 5: Of the nectar and 1/2 cup (125 mL) water, soda water or white wine.
Step 6: To Use Fruit Nectar as Sauce: Spoon nectar as is over fruits, crepes and ice cream.
