Step 1: Get out a small saucepan. Add sugar and water. Mix together and cook on medium to high heat.
Step 2: Bringing to a boil, cook for approximately 3 minutes. Cook until syrupy.
Step 3: Pour into a small bowl with a lid and cool for 10 minutes.
Step 4: Add the lime zest and juice.
Step 5: Cover and chill in the refrigerator.
Step 6: In a large bowl, mix the lime syrup and the melons.
Step 7: Note: if using, add the cayenne pepper when serving. It gets hotter upon sitting.
