  • 1/2 teaspoon black pepper
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 3/4 cup water
  • Dredge:
  • 1/4 cup cornstarch
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • Chicken:
  • 1 pound chicken wings
  • 1 pound chicken legs
  • 1 pound chicken thighs
  • 2 pounds chicken breast

How to Make

  • Step 1: Heat oil in deep fryer

  • Step 2: Mix up batter

  • Step 3: Mix up dredge in brown paper sack add more if needed

  • Step 4: Shake the chicken parts in dredge

  • Step 5: Shake off

  • Step 6: Dip the chicken that has been coated in cornstarch into the wet batter until completely coated.

  • Step 7: Let drip for a couple of seconds and gently lower into pot of oil.

  • Step 8: Fry in 350 degree peanut or canola oil.

  • Step 9: For 8-10 minutes until cooked through in small batches.

  • Step 10: Drain on metal rack, not paper towels, that would make it soggy.

  • Step 11: Keep warm in Oven
