Step 1: Start a pot of heavily salted boiling water
Step 2: Add pasta
Step 3: Cook pasta according to package directions until al dente.
Step 4: Drain, reserving 1 cup pasta water.
Step 5: Meanwhile
Step 6: In a large skillet over medium-high heat, heat oil. Season chicken with salt and pepper to taste
Step 7: Add onions
Step 8: And cook until golden and no longer pink inside, about 8 minutes.
Step 9: Remove
Step 10: Meanwhile, in same skillet, cook bacon over medium heat until crispy, 8 minutes.
Step 11: Drain on a paper towel–lined plate, then chop. Pour off half of fat from skillet.
Step 12: Add garlic, tomatoes, mushrooms and spinach to skillet and cook over medium heat until fragrant and slightly wilted, 2 minutes.
Step 13: Season with salt and pepper, to taste
Step 14: Then add heavy cream, Parmesan, and 1/2 cup of reserved pasta water.
Step 15: Simmer 5 minutes.
Step 16: Add cooked pasta and toss until fully coated, cook 5 minutes then add chicken ,onions and bacon back in and toss until combined. Add more water if needed
