Ingredients

The ingredients are:
  • 6 ounces bacon,(6 slices)
  • 1 1/4 pounds boneless skinless chicken breast, chopped
  • 3 cups baby spinach
  • 1 tablespoon basil, minced
  • 2 cloves garlic, smashed
  • 1/2 cup onions , diced
  • 8 ounces mushrooms, sliced
  • 2 cup tomatoes, chopped
  • 1/2 teaspoons black pepper, to taste
  • 1/2 teaspoons kosher salt,to taste
  • 2 tablespoons olive oil
  • 8 ounces heavy cream,(1/2 cup)
  • 4 ounces parmesan cheese,(1/3 cup)
  • 1 package(16 ounces) spaghetti

How to Make

  • Step 1: Start a pot of heavily salted boiling water

  • Step 2: Add pasta

  • Step 3: Cook pasta according to package directions until al dente.

  • Step 4: Drain, reserving 1 cup pasta water.

  • Step 5: Meanwhile

  • Step 6: In a large skillet over medium-high heat, heat oil. Season chicken with salt and pepper to taste

  • Step 7: Add onions

  • Step 8: And cook until golden and no longer pink inside, about 8 minutes.

  • Step 9: Remove

  • Step 10: Meanwhile, in same skillet, cook bacon over medium heat until crispy, 8 minutes.

  • Step 11: Drain on a paper towel–lined plate, then chop. Pour off half of fat from skillet.

  • Step 12: Add garlic, tomatoes, mushrooms and spinach to skillet and cook over medium heat until fragrant and slightly wilted, 2 minutes.

  • Step 13: Season with salt and pepper, to taste

  • Step 14: Then add heavy cream, Parmesan, and 1/2 cup of reserved pasta water.

  • Step 15: Simmer 5 minutes.

  • Step 16: Add cooked pasta and toss until fully coated, cook 5 minutes then add chicken ,onions and bacon back in and toss until combined. Add more water if needed
