Ingredients

The ingredients are:
  • 2 cups all-prupose flour
  • 2 tablespoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons granulated sugar
  • 1 1/2 teaspoons minced lemon zest
  • 1/2 cup cold unsalted butter
  • 3/4 cup dark raisins
  • 3/4 cup reduced fat buttermilk

How to Make

  • Step 1: Preheat oven to 400 degrees F & set out a baking sheet.

  • Step 2: In a bowl whisk together the flour, baking powder, baking soda, salt, sugar & lemon zest, blending well.

  • Step 3: Using a pastry blender, cut the cold butter into the flour mixture until the mixture is crumbly.

  • Step 4: Add the raisins, tossing lightly, then add the buttermilk, stirring until dry ingredients are moistened.

  • Step 5: Turn the dough out onto a lightly floured surface, & knead lightly 5 or 6 times.

  • Step 6: Divide the dough in half & shape each portion into a 7-inch circle on an ungreased baking sheet. Deeply score, but do not cut completely through, each circle into 6 wedges.

  • Step 7: Bake 10 to 12 minutes, then remove to a wire rack & cool somewhat before serving.
