  • 1/2 cup applesauce
  • 1/4 cup oil
  • 3/4 cup buttermilk
  • 3 eggs
  • 1 teaspoon vanilla extract
  • Frosting:
  • 1 can(8 ounces) crushed pineapple, with juice
  • 1 box(3 ounces) instant french vanilla pudding mix
  • 16 ounces cool whip, thawed
  • 1 jar (8 ounces) maraschino cherries, chopped in half

How to Make

  • Step 1: Preheat oven to 350 F.

  • Step 2: Spray a 9" X 13" baking pan with non-stick spray.

  • Step 3: In a large mixing bowl

  • Step 4: Add cake mix, jello, applesauce, oil, buttermilk,

  • Step 5: Eggs and vanilla.

  • Step 6: Beat with an electric mixer for about 2 minutes

  • Step 7: Until smooth and well blended.

  • Step 8: Pour into prepared pan.

  • Step 9: Bake 30 minutes

  • Step 10: Until cake pops up when touched.

  • Step 11: Cool completely.

  • Step 12: Later

  • Step 13: In medium bowl, place the pineapple and juice in a bowl

  • Step 14: Sprinkle dry pudding mix over the top and

  • Step 15: Stir until blended.

  • Step 16: Stir in whipped topping.

  • Step 17: Add chopped cherries and

  • Step 18: Some cherry juice until 'frosting' turns pink, about 1/4 c. juice.

  • Step 19: Spread topping evenly over the cake.
