Ingredients

The ingredients are:
  • 1 1/2 pounds chicken breasts
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper
  • 1 cup cornstarch
  • 2 eggs ,beaten
  • 1/3 cup oil
  • Sauce:
  • 1/2 cup pineapple juice
  • 1/3 cup soy sauce
  • 1/3 cup chicken stock
  • 1/3 cup hoisin sauce
  • 1/2 cup brown sugar,packed
  • 1 clove garlic, minced
  • Topping:
  • 1 cup pineapple,diced
  • 1/2 cup cashews, roasted,salted

How to Make

  • Step 1: Cut chicken into 1 inch cubes.

  • Step 2: Season with salt and pepper to taste.

  • Step 3: Dip chicken into cornstarch and then into beaten eggs.

  • Step 4: Heat oil in large skillet.

  • Step 5: Cook chicken until browned.

  • Step 6: Don't overcrowd the chicken.

  • Step 7: Once chicken is cooked place on a plate.

  • Step 8: Repeat steps until all chicken is cooked.

  • Step 9: Then drain the oil from the pan and add the chicken back into the skillet.

  • Step 10: Mix up sauce below.

  • Step 11: Once sauce is done pour over chicken and add the diced pineapple and cashews.

  • Step 12: Cook for a minute in the skillet over medium heat or two until combined and sauce fully coats everything.

  • Step 13: Serve over sticky rice.

  • Step 15: Whisk sauce ingredients in a sauce pan over medium heat until smooth.

  • Step 16: Then pour evenly over chicken, pineapple, and cashew
