Ingredients

The ingredients are:
  • 1 lb sweet Italian sausages
  • 1 (15 oz) can garbanzo beans, drained
  • 1 (6 oz) jar marinated artichoke hearts, drained and liquid reserved
  • ½ cup thinly sliced celery
  • ¾ cup chopped tomato
  • 2 tablespoons sliced black olives
  • 2 tablespoons diced red onion
  • 2 tablespoons snipped oregano
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • ½ teaspoon grated lemon peel
  • ½ teaspoon lemon pepper
  • 6 cups mixed greens
  • Crumbled feta cheese, for garnish

How to Make

  • Step 1: Cook sausage links at 350F in a shallow baking pan about 12-15 minutes until internal temperature is at least 160F on a meat thermometer. Let cool and slice.

  • Step 2: Toss sausage slices with beans, artichoke hearts, celery, tomato, olives, onion and oregano.

  • Step 3: Combine olive oil, lemon juice, lemon peel and lemon pepper and dress the sausage mixture.

  • Step 4: Serve on a bed of greens, spinkled with feta cheese for garnish.
