  • 1 cup white flour
  • 1/2 cup cornmeal
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1 tablespoon lemon zest
  • 1/4 teaspoon salt
  • Topping:
  • 1 tablespoons lemon zest
  • 1/4 cup sugar
  • 1/2 teaspoon cinnamon

How to Make

  • Step 1: Cream butter and sugar and lemon zest .

  • Step 2: Add the egg and vanilla to the creamed mixture. Beat until fully incorporated .

  • Step 3: Add the sifted dry ingredients and mix just until combined.

  • Step 4: Refrigerate for 3 hours until firm.

  • Step 5: Preheat the oven to 350F.

  • Step 6: Combine the zest from the second lemon with the cinnamon and sugar.

  • Step 7: Pour the topping onto a small tray or plate and set aside.

  • Step 8: Remove the cookie dough from the fridge and form 1/2 inch round balls.

  • Step 9: Roll each ball into the cinnamon and sugar coating and place about 15 on each tray.

  • Step 10: Bake 10 minutes
