Step 1: Cream butter and sugar and lemon zest .
Step 2: Add the egg and vanilla to the creamed mixture. Beat until fully incorporated .
Step 3: Add the sifted dry ingredients and mix just until combined.
Step 4: Refrigerate for 3 hours until firm.
Step 5: Preheat the oven to 350F.
Step 6: Combine the zest from the second lemon with the cinnamon and sugar.
Step 7: Pour the topping onto a small tray or plate and set aside.
Step 8: Remove the cookie dough from the fridge and form 1/2 inch round balls.
Step 9: Roll each ball into the cinnamon and sugar coating and place about 15 on each tray.
Step 10: Bake 10 minutes
