  • The following recipe serves 4 people.

Ingredients

The ingredients are:
  • 2 (14 ounce) cans chicken broth
  • 1 cup water
  • 1 bell pepper,cut into 3/4 inch pieces (I like to use red for the color, but any will do)
  • 1/2 cup diced carrot
  • 1/2 cup dried egg noodles (The thinner the better) Or use wonton skins cut into thin strips.
  • 1/3 cup green onions, thinly sliced
  • 1 tablespoon soy sauce (I use low sodium)
  • 1 teaspoon grated fresh ginger
  • 1/8 teaspoon crushed red pepper or more depending on how you like your spice! I use more!
  • 1 cup chicken, cooked and cubed
  • 1 cup fresh snow peas halved crosswise (at an angle)

How to Make

  • Step 1: In a large pan or dutch oven combine broth, water, bell pepper, carrot, noodles, green onion, soy sauce, ginger and crushed red pepper. Bring to a boil and reduce heat when it does. Cover and simmer for 6-8 minutes or until the veggies are tender crisp and the noodles are done.

  • Step 2: Stir in the chicken and snowpeas. Simmer uncovered for 1-2 minutes or until the peas are crisp tender. Serve!
