  • 4 carrots ,cut on bias
  • 1/2 cup red onions,chopped
  • 2 tablespoons capers
  • 1/4 cup fresh dill,minced
  • 4 tablespoons olive oil

How to Make

  • Step 1: Preheat oven to 375 degrees Fahrenheit

  • Step 2: In ziploc bag mix oil ,carrotsand onions

  • Step 3: Then

  • Step 4: Lay them on a baking sheet lined with parchment paper.

  • Step 5: Sprinkle on most of the dill and capers saving some for garnish

  • Step 6: Roast in the oven for 45 minutes at 375 degrees until golden.

  • Step 7: Toss with capers and dill you saved back
