  • 2 pounds Pacific halibut steaks
  • 1 medium zucchini, thinly sliced
  • 1 Spanish onion, thinly sliced
  • 2 ripe tomatoes, sliced 1/4-inch thick
  • 1 cup tomato juice
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon Worcestershire sauce
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 41/4 teaspoon pepper
  • Parmesan cheese (optional)

How to Make

  • Step 1: In baking dish, place halibut steaks in a single layer and top each with zucchini, onion and tomato slices.

  • Step 2: Combine remaining ingredients except Parmesan cheese and pour over fish.

  • Step 3: Sprinkle generouslywith Parmesan if desired.

  • Step 4: Bake in preheated 425°F oven for 20 minutes, basting with cooking juices 2 to 3 times.
