Step 1: Preheat oven to 350°F.
Step 2: In a stand mixer, combine cake mix, oil, eggs and manderin orange can liquid with water, (totaling 1 cup).
Step 3: Add mandarin oranges, extract and pineapple.
Step 4: Place puff pastry sheet on a cookie sheet. If you are using
Step 5: Separate batter evenly between 2 floured 8-inch cake pans and bake 35 minutes or until toothpick comes out without crumbs.
Step 6: When cooled
Step 7: Cut horizontally in half
Step 8: Bake puff pastry, weighted with a pan or cookie sheet in oven at same time.
Step 9: Set aside to cool.
Step 10: Frosting:
Step 11: Cream butter and sugar together.
Step 12: Add cream cheese, one ounce at a time, while still running the mixer.
Step 13: Add extract and pineapple and combine well.
Step 14: Frost each layer (4)of cake, sandwiching puff pastry in between the layers of frosted cake if using
Step 15: Frost entire outside of the cake.
Step 16: Make it smooth
