Ingredients

The ingredients are:
  • First pan:
  • 3 tablespoons olive oil
  • 1/4 pound ground lamb
  • 1/4 cup onion,minced
  • 1/4 cup green bell pepper,minced
  • 1 cup tomatoes,chopped,(3)
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/32 teaspoons nutmeg
  • Second pan:
  • 2 tablespoons butter
  • 4 eggs
  • 1 tablespoons parsley ,minced

How to Make

  • Step 1: In first pan saute oil onions and lamb add bell peppers and garlic

  • Step 2: Cook until translucent

  • Step 3: Add everything else

  • Step 4: Simmer 25 minutes until cooked

  • Step 5: At very end

  • Step 6: Second pan:

  • Step 7: Heat a tablespoon of butter

  • Step 8: Beat 2 eggs

  • Step 9: Season to taste

  • Step 10: Make an omelet by letting it cook without stirring adding 1/2 of cooked lamb mixture

  • Step 11: Fold over

  • Step 12: Plate

  • Step 13: Repeat

  • Step 14: Sprinkle parsley on top
